Which Shelly sensors should I buy?

Only the Gen4 sensors have Matter, and the Flood Gen4, Flood S Gen4 and Presence Gen4 hold Matter certifications.

Each runs Matter over Wi-Fi by default and can switch to Zigbee firmware. The Gen3 H&T sensors, the Plus Smoke and the Gen1 sensors work over Wi-Fi with a local API. Shelly has discontinued the Plus H&T, the Gen1 H&T and the Motion 2. The Plus Smoke alarm runs on a battery, and the Gas sensor runs on mains power in CNG and LPG versions. Home Assistant supports each sensor except the AZ H&T.

The Gas sensor comes as a CNG version for natural gas and an LPG version for propane. Shelly states no model code for the Gas sensor, the original H&T or the original Flood.
